Place potatoes, carrots, and onions at the bottom of the slow cooker. Add garlic on top.
3. Add the roast
Place the seared roast over the vegetables.

Pour in red wine and beef broth. Add salt, pepper, thyme, and tomato paste if using.
5. Cook low and slow
Cover and cook on LOW for 8 hours or HIGH for 4–5 hours, until the meat is tender and easily pulls apart.

Remove the roast and vegetables. Mix cornstarch with water, then stir into the cooking liquid. Let it thicken for a few minutes.
7. Serve
